Cast iron is becoming scarce with the ever-growing surplus of Teflon coated cookware. This is especially true for tava-like tortilla irons. I found this on Amazon.com and it rocks!Advice: Just remember that after you thoroughly clean the griddle, coat it entirely with cooking oil (I use olive oil) and place into an oven set to 200 to 300 deg F. Keep it in there until the oil stops burning off. I know this sounds strange and yes, it will be stinky, but it winds up seasoning the pan so that it will not rust and food will not stick to it. What you are doing is baking on a permanent non-stick coating to the surfaces. It works extremely well on the cooking surface. Also - in the first few months of using your new product, do not regularly wash it if it is used only in your home, as that will take off the seasoning. Instead, just wipe down the cooking surface with a paper towel. Just remember that any microorganisms are destroyed when you heat up the cooking surface.Lastly, there is some debate on whether or not Teflon coated cooking products are safe. Just note that you will be ingesting it over time. That is something that keeps me looking for cast iron and stainless steel products.I'm not an expert on cast iron cookware but I use this to cook crepes and it works pretty well.My only complaint is the roughness of the surface of the pan. I've read many discussions about this topic and understand why many people think that it shouldn't be polished smooth. I will just say that for making crepes I now have a smooth pan (that I already owned) and now this rougher pan and I prefer the smooth one. I am considering smoothing this one to match my other one.I purchased this Keilen Mexican Fiesta Comal because it needed to be seasoned. The product description and the customer review references stated that it needed to be seasoned. That was the specific reason I selected this item instead of one of the other comals available through this site. My reason being that I am very particular about the foods I eat, and have no way to determine what oil products are used in the seasoning process.This is a very nicely made comal/tortilla griddle. It's a reasonable weight and a nice size. However, it very clearly states on the packaging that it is "Pre-Seasoned Cast Iron 'Ready-to-Cook'". In fact, the label states in five places that it is pre-seasoned, including "treated with vegetable oil and heated in extremely high-temperature ovens". Most oils become carcinogenic when heated, and the residual oils are what "seasons" cast iron. I don't want that in my food.Unfortunately, I am returning this product due to this misrepresentation.Just received it and I can tell like all my other cast irons I am going to be using this great deal of the time,you do not have to use this for just tortillas but use it for searing steaks or chicken breast.you could also roast vegs on this griddle but what i like the most is I can put pizza dough on the pan and finish it in the oven for a nice crisp pizza.basically this griddles uses are only limited by the cook and what he or she can think up.Yes it a little heavy but not overly heavy to me and I am disabled in a wheelchair and I find is easy to use.So much better then that nonstick set of pans you have to keep replacing,this is lifetime cookware if taken care.I grew up using the removable tops of old wood stoves. Still have my grandmother's old ones. But wanted an up grade because those tops aren't very big and I was limited on how big the tortilla could be. Very pleased with these ones. I know it time they will be every bit as good as my grandmother's old wood stove tops.I bought this pan to make pancakes and crepes, I have made crepes a few times over the past week of ownership. and find this to be an incredible non-stick pan for this purpose. the small ridge is large enough to hold in the batter, even when you are tipping the pan for even (thin) coverage (for Crepes) and low enough to make it easy to get a spatula in there to flip it. I am intrigued by the fact that it is a tortilla pan, may have to search that out for recipesThis Tortilla PreSeasoned Cast Iron Warmer is one tough cookie. It is so well made it became quickly my kitchen favorite - so busy I am using it several times a day. I love it. On the top of it it is versatile, I recommend it, you cannot go wrong owning this item in your kitchen. The food just comes out beautifully out of these wonders made of cast iron. I am always happy with my cooked, baked and roasted products on cast iron. This Tortilla Cast Iron warmer is one of the best quality cast iron cook/bake/roast items I have ever owned, truly.Doesnt heat as well as my other antique round cast iron pan. All around the edges doesn't get hot evenly with center of pan because the flat bottom of the pan doesn't go all the way out to edge.
