This is a heavy, versatile griddle. So far I've used it for smash burgers (they were great), bulgogi tacos (even better) and steak (yum). With a proper burner, this griddle will hit around 900 degrees, perfect for that delicious, crusty-sear on a steak. I've noticed a very slight warping on the structural part on the bottom side rails after super high temp cooks but the cooktop surface is still solid and flat thanks to the heat dispersing disc welded to the bottom. If you have a single propane burner, this is a perfect accompaniment. After cooking, gently clean and then *re-oil the griddle* (I use avocado oil). After oiling, cover the cook surface with a sheet or two of plastic wrap for easy, rust free storage. I'm an old chef, currently in culinary school, and cook very often. I enjoy this griddle very much!!
