What do you get when you combine high quality design, cast iron material and nonstick coating? A crowd pleaser that'll net you Home Cook of the Year awards time and again.I've always wanted a Blackstone so I could cook all the diner-style foods I've wanted to make at home. But they're expensive and would take up too much of the preciously rare space in the backyard. Then there's regular skillets, which don't allow me to use the long spatulas inherent to this style of cooking. And the other skillets I found are all flat and the food would easily slide, tip or bounce off. This is the only thing I've found that lets me use my long spatulas, doesn't take up a massive chunk of space, is super easy to clean and -- perhaps most importantly of all -- is very affordable.I have a large 100,000 BTU single outdoor burner that was just begging for a partner like this griddle. Sure I can put it on the BBQ and it'll work fantastically. But I put it on that burner and magic ensues.Extraordinary eggs (scrambled, over wasy and in-a-basket) with sides of bacon crisped to perfection. Remarkably thin crepes that can be flipped as if I hold 7 PhD's in crepe flipping. And don't even get me started with the mouth watering, put-any-food-truck-to-shame Philly cheesesteaks. This griddle makes it all so easy and accessible that I'm weaping for having spent so many years cooking without it.It takes a little bit to heat up (hence, one of the reasons I opt for my super powerful burner). But once heated, it's a masterclass in uniform heat dissemination. The raised sides easily keep the food from running away. And the "missing" fourth side is perfect for quickly scraping all the food and oil down and scraping it onto a grease bin (using non-metallic scrapers of course).And once I scrape that food off, cleaning is literally as simple as wiping a dry paper towel across the surface. I then wait for the griddle to cool and then spray some rubbing alcohol on the surface and give it one last wipe.As long as I take care of this unit and not scrape away the nonstick coating, this griddle will serve me well into the future.
